A brilliant yellow color already indicates a wine of considerable intensity. White fruits, flowers and citrus fruits are very present on the nose. They support a firm structure on the finish. A powerful Corton with great ageing potential.

Food pairings

The wine's power deserves a cuisine of the same tone: sautéed prawns, lobster à l'armoricaine...or simply on its own to reveal its splendor.

At the exit of the village of Aloxe-Corton towards Pernand-Vergelesses, initially planted with Pinot Noir, this parcel of Fiètres was replanted with Chardonnay in 2012. Facing south/southeast, the soil is composed of red clay. The wine is often fresh and dense, with a fine minerality on the finish.

Vinification and aging

This Corton Grand Cru Blanc Cuvée Docteur Peste has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.

History of the cuvée

Jean-Louis Peste practiced medicine at the Hospices de Beaune for over 30 years in the mid-19th century. His daughter, Baronne de Baÿ, bequeathed a vast estate to the Hôtel-Dieu in 1924, in memory of her father. Made from 89% very old vines, or vines planted before 1985, 52% of this Cuvée comes from the Chaumes and Voierosses parcels facing south-southwest. Their vines were planted 4 times between 1976 and 1985. Les Bressandes, whose oldest vines date back to 1940, and Les Grèves provide the final balance to this Cuvée.
