Between harvest and auction: several meticulous tastings

Every year, between the harvest and the auction, Albert Bichot winemakers team and Jean-David Camus taste all the Hospices cuvées many times with Ludivine Griveau at the Hospices winery. These sessions enable us to follow the evolution of the wines and to draw up detailed tasting notes for our future buyers, including their personalized auction plan. At the same time, we begin to prepare the aging of the wines entrusted to us, anticipating the choice of barrels to guarantee optimal conditions for this crucial stage. Nothing is left to chance.

During the auction: buying for you at the right time and right price

A suspended moment, the ultimate combination of pleasure and rigor, it's almost impossible to describe the atmosphere during the Hospices de Beaune auction in November. Albéric Bichot holds in his hand his paddle with always the same number. He'll be bidding for all our customers. At his side, the Albert Bichot teams and customers are equally focused. Because everything moves very fast, even if the sale lasts several hours and often ends late into the evening.

Thanks to our experience, we know when to wait or seize a great opportunity to get the best lots at the right price. This skill, honed by years of involvement, ensures our customers an optimal purchase, tailored to their expectations and the wines' potential.

Aging your wines in our cellars: a crucial phase lasting 12 to 18 months

Once the barrels have been bought at the auction, we collect them from the Hospices winery and install them in our dedicated vaulted cellar in Beaune to begin the aging phase. Each wine is aged with meticulous care, respecting the identity of the cuvée and the organic certification. We carefully select barrels (forest of origin, grain, toast, age) to enrich the aromatic complexity of Hospices wines. Throughout the ageing process, we monitor each barrel with the utmost rigor, right up to bottling at the ideal moment. Finally, the bottles are carefully labelled and packed in beautiful wooden cases, ready for shipment around the world.
