A dark red color already indicates a wine of considerable intensity. Very present black fruits support a firm structure on the finish. A powerful Corton with great ageing potential.

The wine's power deserves a cuisine of the same tone: fine grilled or sautéed meats, game, spicy cheeses.

Facing south, south-west, on a gentle, draining slope, this climat looks south and extends Corton Charlemagne along the road leading to Pernand-Vergelesses. The clays are red, giving the Pinot Noir an assertive tannic structure. The numerous pebbles aerate the soil and certainly add finesse to the mid-palate. Chardonnay expresses itself very well with the white cuvée of the same name. A wine for laying down, with a powerful texture in its youth.

Vinification and aging

This Corton Grand Cru Chaumes Docteur Peste has been skilfully vinified by the Domaine des Hospices de Beaune. Sold each year at the Hospices auction on the 3rd Sunday in November, our house Albert Bichot very regularly acquires this great wine on behalf of customers who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.

The Domaine des Hospices de Beaune has been certified organic since the 2024 harvest, and of course we mature this wine in our Albert Bichot cellars in line with this environmentally-friendly philosophy.

History of the cuvée

Jean-Louis Peste practiced medicine at the Hospices de Beaune for over 30 years in the mid-19th century. His daughter, Baronne de Baÿ, bequeathed a vast estate to the Hôtel-Dieu in 1924, in memory of her father. Made from 89% very old vines, or vines planted before 1985, this Cuvée is historically a blend of Grand Cru parcels: Chaumes and Voierosses for the most part, as well as Bressandes and Les Grèves. Since 2022, this cuvée has been made from 100% Grand Cru Les Chaumes.
