Since 2015, Ludivine Griveau has been the régisseur and winemaker at Hospices de Beaune
Ludivine Griveau, talented winegrower and winemaker
After a brilliant university career and initial professional experiences in Burgundy, Ludivine Griveau was appointed régisseur of the Domaine des Hospices de Beaune in 2015. It's a huge responsibility that covers two eminently complementary functions.
Firstly, she's in charge of the viticultural side: managing the running of the Hospices vineyard throughout the vegetative cycle. She implements precision viticulture on 60 ha and over 120 certified organic plots, from Chablis to Pouilly-Fuissé, including of course the Côte de Beaune and Côte de Nuits. She is supported in this task by 23 winegrowers, employed by the Hospices. Each of them looks after around 3 hectares.
Each vintage is a new challenge, having to adapt to climatic conditions, agronomic objectives and respect for living organisms. The goal is ambitious, but met with talent: to enable each plot to produce the best grapes. Ludivine Griveau must also have a long-term vision, to face new challenges such as climate change or the management of new plantations.
Ludivine Griveau is then in charge of vinifications, i.e. the creation of all the wines that will be sold at auction. They take place in a modern winery located right next to the hospital - quite a symbol -, with a dedicated team of a few people in the winery and cellar. Sébastien Lecomte, assistant manager, has been with us for many years. The harvest period is a crucial and intense time. With precision and emotion, Ludivine Griveau shapes every Hospices de Beaune cuvée. Her attention to detail and hard work have enabled the Domaine's wines to reach new heights, vintage after vintage. It was also under his guidance that the Domaine converted to organic farming from the 2024 vintage.
At Albert Bichot we are convinced that thanks to Ludivine Griveau each Hospices wine expresses the quintessence of its terroir of origin. After vinification, all the Hospices wines are filled into new 228-liter barrels during October, until the auction on the 3rd Sunday in November. Another aging phase can then begin in our cellars for all the wines we've purchased...
