Clean yellow color with honey accents. Fresh nose of candied citrus, yellow fruit and hints of lime blossom. Round and full-bodied on the palate. A pleasure wine worthy of its noble Mâcon origins.

Food pairings

Enjoy on its own as an aperitif, with a few salmon toasts or small cubes of Comté cheese. A nice spinach salad with a few walnut chips, a codfish steak or a dry goat's cheese would also be wonderful!

Three terroirs are at the origin of this cuvée. Les Plessys, with its clay, brings roundness and power. Les Chevrières, a steeper slope with stony, chalky soil and a thin layer of clay, lends a "racy" side as well as minerality. Finally, Les Robées are characterized by their fruity contribution.

Vinification and aging

This Pouilly Fuissé Cuvée Françoise Poisard has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.

History of the cuvée

Entrusted to the Domaine des Hospices de Beaune in 1994 and 2012 after the death of Françoise Poisard, these vines, located in Chaintré in the south of the appellation, are mostly between 35 and 90 years old and are spread over five parcels: Les Plessys, which produces round, powerful wines, and Les Robées and Les Chevrières, which produce fruity, mineral wines. La Chatière and Haut de Savy produce more structured wines.
