Food pairings

Foie gras ravioli, roast capon or free-range chicken, characterful cheeses.

The parcel lies at the foot of the slope on fairly shallow limestone rock. This premier cru is one of the most famous of the 28 in the Pommard appellation. This cuvée is tannic yet fine, robust yet round, and beautifully crafted for long ageing.

Vinification and aging

This Pommard Epenots 1er Cru Cuvée Dom Goblet has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.

Le Domaine des Hospices de Beaune est certifié bio depuis la récolte 2024 et bien entendu nous élevons dans nos caves Albert Bichot ce vin en respectant cette philosophie respectueuse de l’environnement.

History of the cuvée

The abbey of Cîteaux played a pioneering role in the cultivation of vines in Burgundy. As early as 1260, archives record the donation of a vineyard in Pommard called "En Espeneaul", which today is spelled "Epenots". Paying homage to Cîteaux, this Cuvée was named after the Abbey's last cellarer, Dom Goblet, who served until the French Revolution. The Pinot Noir vines are over 50 years old, producing a subtly aromatic, harmonious wine.
