Pommard Cuvée Billardet

Domaine des Hospices de Beaune

Albert Bichot’s view

Intense red color. Intense nose of black fruits and cocoa. A wine very typical of its terroir, with a masculine structure without austerity, that maturation and years in bottle will harmoniously age.

Food pairings

Beautiful poultry liver terrine, fondue bourguignonne, porcini fricassee.

This cuvée reflects the expression of two highly complementary areas of Pommard: while the Arvelets express straightforwardness and full-bodied texture on the palate, the Noizons bring depth and volume. Two very clayey soils with very contrasting exposures that harmonize whatever the vintage. Medium-ageing cuvee.

Vinification and aging

This Pommard Cuvée Billardet has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.

Le Domaine des Hospices de Beaune est certifié bio depuis la récolte 2024 et bien entendu nous élevons dans nos caves Albert Bichot ce vin en respectant cette philosophie respectueuse de l’environnement.

History of the cuvée

With this Cuvée, the Hospices pay tribute to two eminent doctors: Antoine Billardet, who worked during the Revolution, and his son Charles, a student surgeon in Bonaparte's army, who went on to devote fifty years of his life to the patients of Beaune. This Cuvée is one of the most esteemed Pommards on the Hospices estate. 87% of the vines were planted in 1988 or earlier, with the oldest dating back to 1960 and 1954. A further 35% of the Cuvée comes from Premier Cru Les Arvelets (vines over 25 years old).
