Savigny-les-Beaune 1er Cru Cuvée Fouquerand

Domaine des Hospices de Beaune

Albert Bichot’s view

Bright red color. Very Pinot nose of red and stone fruits. Hint of spice. Rich palate with enveloping tannins. A pleasure to drink.

Food pairings

Pâté en croûte, duck breast, mushroom velouté.

Three climates make up this cuvée: Talmettes, Gravains and Serpentières. All three are south-facing, but each has its own contribution to make. Les Talmettes, at the top of the hillside, close to the bedrock, on shallow soil, is a guarantee of minerality. The Gravains and Serpentières, further down the slope and therefore more clayey, provide power and a grain of tannin that often has a velvety, almost solar touch. A round wine to be drunk young, if desired.

Vinification and aging

This Savigny-les-Beaune 1er Cru Cuvée Fouquerand has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.

Le Domaine des Hospices de Beaune est certifié bio depuis la récolte 2024 et bien entendu nous élevons dans nos caves Albert Bichot ce vin en respectant cette philosophie respectueuse de l’environnement.

History of the cuvée

Denis-Antoine Fouquerand and his wife Claudine left legacies to the Hospices in 1832 and 1844. This wine comes from Pinots fns plants in Talmettes, dating from 1965 and 1966, Gravains, partly planted in 1958, and Serpentières, dating from 1997. The Cuvée is made from some of Savigny's most renowned vineyards, from south-facing slopes.
