Pommard Cuvée Raymond Cyrot

Domaine des Hospices de Beaune

Albert Bichot’s view

Bright red color. Intense nose of black fruit with a hint of sweet spices. Fresh and well-structured on the palate, with dense, noble substance. Good potential.

Food pairings

Quiche lorraine, rack of lamb with herbs, eggplant gratin, brie de Meaux.

This cuvée is rooted in four of Pommard's finest terroirs: the Riottes, with its deep, clayey soil, expresses a dense mouthfeel at the heart of this cuvée; the Charmots and Bertins, both stonier, take up the challenge of an "airy" Pommard attack; and it's undoubtedly the red soil of the gentle slopes of the Rugiens (from below) that gives this cuvée its power. It can often be kept for a long time.

Vinification and aging

This Pommard Cuvée Raymond Cyrot has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.

The Domaine des Hospices de Beaune has been certified organic since the 2024 harvest, and we naturally age your wine in our Albert Bichot cellars in line with this environmentally-friendly philosophy.

History of the cuvée

Mr. and Mrs. Cyrot-Chaudron donated their vineyards to the Hospices de Beaune in 1979. The donation included several parcels of old vines which, in perfect condition and producing small harvests of fine grapes, have been preserved. The Premiers Crus are located in Les Charmots, Les Bertins and Les Rugiens bas.
