Before the auction, several technical tastings
with a double objective
Between the harvest in early September and the auction (3rd Sunday in November), Albert Bichot winemakers and Jean-David Camus will be tasting all the Hospices de Beaune cuvées several times. It's an opportunity to share our feelings about the current vintage with Ludivine Griveau, and to listen to her sensitive, technical approach on her vinification choices. We see how each wine evolves, almost week by week. These tastings, which are both highly professional and convivial, serve two important purposes.
Our first objective: to advise our future buyers in the choice of their target wines
First of all, we can analyze each wine in detail and write down precise tasting notes, which we will of course pass on to our future buyers. We also give our customers an account of the vintage, and an analysis of each wine's potential. This leads to the creation of a personalized auction plan. Of course, we also draw on our experience as the number 1 buyer for 30 years, as well as on the vinifications of our Domaines' wines, to take the necessary distance and thus have the most objective opinion possible.
Our second objective: to anticipated the aging stage of Hospices wines in our cellar
These regular tastings enable us to anticipate the aging phase in our cellars, and in particular the future choice of barrels we make. In this way, we get a feel for the evolutionary dynamics of each cuvée, which will be our guiding principle for the crucial ageing phase and the care to be taken with the wine during the time it spends in our cellars until bottling.
