Vinification and aging
This Corton Vergennes Grand Cru Cuvée Paul Chanson has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.
The Domaine des Hospices de Beaune has been certified organic since the 2024 harvest, and we naturally age your wine in our Albert Bichot cellars in line with this environmentally-friendly philosophy.
A great ambassador for the wines of France, and Burgundy in particular, Paul Chanson bequeathed some old vines to the Hospices in 1974. He used to say that the grapes were Pinot Blanc, rather than Chardonnay. The vines are located on a small hill adjoining Corton-Bressandes, on land mostly planted with Pinot Noir. They produce fascinating wines, often developing a quince-like aroma. 30% of the vines date from 1987, the rest from the 1940s.
