Vinification and aging
This Corton Vergennes Grand Cru Cuvée Paul Chanson has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.The Domaine des Hospices de Beaune has been certified organic since the 2024 harvest, and we naturally age your wine in our Albert Bichot cellars in line with this environmentally-friendly philosophy.
History of the cuvée
保罗-香颂（Paul Chanson）是法国葡萄酒，尤其是勃艮第葡萄酒的代言人，他于 1974 年将一些古老的葡萄树遗赠给了安宁疗养院。他曾说这些葡萄是白皮诺，而不是霞多丽。这些葡萄藤位于 Corton-Bressandes 旁的一座小山上，大部分种植的是黑皮诺。30% 的葡萄树种植于 1987 年，其余的种植于 20 世纪 40 年代。
