After a brilliant red color, freshness is the common thread running through this wine, both on the nose and on the palate. Red and black berries, a hint of menthol and great precision are the hallmarks of this remarkable wine.

Duck aiguillettes, free-range lamb, kidneys in Madeira sauce.
Beautiful East/South-East exposure, with one half in the Santenots du Milieu and the other half in the Plures. The slopes are gentle and the clays are airy and stony. The result is a rich, unctuous wine, tinged with the elegance characteristic of Volnay's finest terroirs. A little younger than the other Santenots cuvée, this wine nonetheless has great ageing potential and refined tannins.

Vinification and aging
This Volnay Santenots 1er Cru Cuvée Gauvain has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.
The Domaine des Hospices de Beaune has been certified organic since the 2024 harvest, and we naturally age your wine in our Albert Bichot cellars in line with this environmentally-friendly philosophy.
One of the most generous donors, Bernard Gauvain bequeathed his entire estate to the Hospice de la Charité in 1804. The vines for this Cuvée are located on the hillsides of Volnay-Santenots. Their fruit, generally among the first to ripen, produces rich, elegant and complex wines. It is one of the great prides of the Domaine des Hospices de Beaune.
