Hospices de Nuits 2025 vintage presentation
Jean-Marc Moron, the winemaker from Domaine des Hospices de Nuits-Saint-Georges, presents the splendid 2025 vintage.
A summer-like after-season
Burgundy enjoyed summer weather from May to September. Regular rainfall kept the soil moist and prevented water stress on the vines until the harvest. Thanks to this sunny spell, the grapes were not affected by health problems, and veraison began on August 20. Harvesting began on September 3, 2025.
Given the excellent quality of the bunches, sorting was minimal. Yields were lower than expected, averaging 21 hectolitres/hectare. This enables Domaine des Hospices de Nuits to offer 81.5 barrels for auction. The 2025 vintage is far more generous than the extremely rare 2024, but we're not yet back to the Domaine's full production potential.
Technical itinerary: a classic approach to winemaking
Jean-Marc Moron continues to apply the methods he has successfully employed for 35 years at the head of the Domaine. After total destemming, each plot is vinified separately. A pre-fermentation maceration of four to seven days helps to gently extract color, tannins and aromas. During fermentation (using indigenous yeasts), which lasted 4 days this year, the must is pumped over or punched down daily. The musts are then gently pressed in a pneumatic press. A 10- to 15-day vatting period separates the juice from the lees and bourbes, before the wine is put into barrels at the beginning of October.
A structured, elegant and atypical 2025 vintage, but ultimately very Burgundian.
These three words aptly describe the 2025 vintage, which combines the characteristics of a sunny year with intense colors and marked acidity, but whose cooler temperatures at the end of the cycle preserved a fine sugar content. As a result, the wines are balanced, charming and, ultimately, very Burgundian. Affecting in particular the southern side of the Nuits-Saint-Georges appellation, slightly more modest yields linked to a heterogeneous florason are a surprise. This 2025 vintage is therefore singular in its genesis, but there is no doubt that it has enabled the creation of wines of superb quality. Today, we can speak of a great vintage, and time will no doubt allow us to step back and go even beyond this initial enthusiasm...
A "vintage in 5" that lives up to its reputation
This 2025 vintage lives up to the reputation of the "5" years, even if its atypical character makes it difficult to compare. Its color is as intense as that of the "en 5" vintages, but its structure is more delicate, thanks to an early harvest of grapes that have retained their freshness and elegance so typical of the Côte de Nuits and our parcels. Elegant, fleshy and full-bodied, this is a vintage from which much is rightly expected.
Jean-Marc Moron's last vintage after 35 years at the helm of Hospices de Nuits-Saint-Georges
This year, 2025, is a special one: it's the last vintage of Jean-Marc Moron, who has been managing the estate for 35 years. It has been a real pleasure to work with Jean-Marc all these years, aging in our cellars the great wines he has shaped vintage after vintage. He's a remarkable person, a great listener, extremely professional and dedicated to his mission, and a great person! He will undoubtedly leave his mark on the history of Domaine des Hospices de Nuits-Saint-Georges. Our warmest thanks to him.
Passing the baton with Laurence Danel, new Hospices de Nuits winemaker
Laurence Danel succeeds Jean-Marc Moron at the head of Domaine des Hospices de Nuits-Saint-Georges. After several years' experience in Burgundy, she will be in charge of the prestigious Côte de Nuits estate. Several months of transition will ensure a smooth handover. We were able to taste all the wines of the 2025 vintage alongside them.
