Tasting

A very solid yellow colour indicates a wine of considerable intensity. The fruit is luxurious in quality, definitely showing some yellow stone-fruits, fresh flowers and citrus, and full enough to match the firm structure of the finish. This is a powerful Corton with a real cellaring potential.

Food matching

The wine’s power deserves a cuisine on a par: beautiful grilled fish, goat cheese… or just on its own to pay respect to its splendour.

History

Jean-Louis Peste was a doctor at the Hospices de Beaune for 30 years in the mid-19th century. His daughter, Baroness du Baÿ, bequeathed a vast estate to the Hôtel-Dieu in his memory, in 1924. Made from 89% fully mature, or very old vines, this Cuvée comes principally (52%) from Chaumes et Voierosses, which is south and south-west-facing land. These vines were planted 4 times between 1976 and 1985. Les Bressandes, whose oldest vines date from 1940, with Les Grèves bring complexity, richness and balance to this Cuvée.

Tasting

Full pale yellow in colour, with a concentration of ripe apples with some pears and flowers in the bouquet, it is a heavyweight for sure, with a significant volume of fruit and fine persistence. A wine that ages beautifully to reveal its full potential.

Food matching

The wine’s nobility requires very fine cuisine: scallops carpaccio, sushi, grilled seabass.

History

Paul Chanson was a great ambassador for the wines of France, and for Burgundy in particular. This Cuvée comes from old vines, which he bequeathed to the Hospices in 1974. Paul Chanson always used to say they were Pinots Blancs, rather than Chardonnay. They are planted on a prominent hillock adjoining Corton-Bressandes, on land most often carrying Pinots Noirs, and give fascinating wine, often with an aroma of quince 30% of the vines date from 1987, the balance from 1940’s.

Clear bright fresh colour, the nose is perfectly poised, showing elegance in the floral bouquet, pure white fruit notes on the palate with a fresh finish.

History

This wine comes from a plot which used to be planted with Pinot Noir (the grapes going into the Beaune Cuvée Cyrot-Chaudron). The old Pinot vines were recently pulled up, and the land replanted in 2010 with Chardonnay. The soil is stony and limerich, with white marls – well suited to white wine production. It is high on the hillside, near the source of the Lulunne stream.

History

This vineyard is a gift made in 2015 by Monsieur Jean-Marc Brocard, who was born about 30 kms. west of Beaune in Chaudenay-le-Château. Members of the family were often grateful to Beaune’s Hospital, at times of illness. On his marriage to a girl from the Yonne, Monsieur Brocard moved away, while staying within the region, establishing a vineyard estate in Chablis from 1975 onwards. Côte de Léchet is one of the best known 1st Growths on the Left Bank of the River Serein, which runs through Chablis. These vines are approximately 30 years old, situated in the heart of the pebble- rich, south-east facing, steeply-sloped hillside. The vines are low-yielding, and cultivated bio-dynamically.

Bright and vivid robe. Yellow fruits, flowers and mild spices (nutmeg) on the nose. Generous palate with tension too. An exceptional wine that deserves to age to reach its apogee.

History

The name of Salins is naturally associated with Guigone, the cofounder of the Hospices de Beaune. She had many generous benefactor descendants, of whom François de Salins was one. He was Priest and Canon of the Collegiate church of Notre Dame de Beaune, and in 1745 left his Domaine of vines in Aloxe to the Hôtel-Dieu. These vines face south and southwest. They are situated in the historic lieu-dit Le Charlemagne, running uphill from the narrow road which links Pernand with Aloxe-Corton. 58% of the vines date from a planting in 1944, with 27% from 1981, the balance from 1998.

Tasting

From the first moment on the nose, this wine shows a grand cru intensity. Hugely weighty fruits and flowers. Same exceptional intensity on the palate, while the acidity at the finish maintains the balance. This has a very long aftertaste and will develop into a wonderful bottle.

Food matching

Vibrant on its own, it will pair finely with fish sashimi, a creamy poultry dish or an old mountain hard cheese.

History

It was in 1584 that Charlotte Dumay bequeathed vines in Corton-Renardes to the Hôtel-Dieu. This Cuvée is called Roi Soleil, in remembrance of King Louis XIV who in 1658, with his mother and his court, visited the Hospices. The King decided to give a yearly grant to the Institution, and all signed the visitors book. Old Pinot Noir vines were pulled up from this plot in 1997. Today’s great white Corton-Charlemagne comes from east-facing land which lies high on the Corton hillside, and is now deemed more suitable for Chardonnay than Pinot Noir. The wine shows great raciness, as well as fine potential for ageing.

Fine clear bright primrose in colour, this wine demonstrates wealth of concentrated fruit from the first nose. Massive and flamboyant concentration but nothing is overdone. A perfect expression of a magical terroir at its best.

Best enjoyed on its own, almost religiously in all its splendour, or to marry with a refined cuisine that will let the wine be at the center of the stage.

History

This vineyard was planted in 1974. It was acquired by the Hospices in 1989, and named after the Ladies of Flanders, in commemoration of the origins of the community of Sisters who have cared for the sick of the Hôtel-Dieu, down the centuries. The vines lie in the commune of Chassagne-Montrachet. They regularly produce a great white wine which is striking for its minerality, its length of favour, its capacity to age and its exceptional complexity.
