These parcels of Vergelesses are located north of the village of Savigny-les-Beaune and face south/southeast. Those at the top of the hillside are rather sandy, with light, chalky soil, giving the cuvée a consistently smooth attack. The heavier, denser clays of the lower-slope plots mean that the finish is always a little more full-bodied. The result is a fresh, solid, supple and generous wine that can be enjoyed young.

Vinification and aging
This Savigny-les-Beaune 1er Cru Cuvée Forneret has been skilfully vinified by the Domaine des Hospices de Beaune. Sold every year at the Hospices auction on the 3rd Sunday in November, Albert Bichot regularly buys this great wine on behalf of clients who then entrust us with its ageing in our cellars. During this important period, thanks to meticulous work and the blending of a variety of barrels, we further develop its complexity and potential.
The Domaine des Hospices de Beaune has been certified organic since the 2024 harvest, and we naturally age your wine in our Albert Bichot cellars in line with this environmentally-friendly philosophy.
Although the gift comes from his mother, the Cuvée is more reminiscent of Xavier Forneret, a renowned 19th-century poet and writer from a family of notables who had lived in Beaune since the 16th century. The Cuvée originates from vines on the northern slopes of Savigny: Les Vergelesses face south and southeast.
