Tasting
Full pale yellow in colour, with a concentration of ripe apples with some pears and flowers in the bouquet, it is a heavyweight for sure, with a significant volume of fruit and fine persistence. A wine that ages beautifully to reveal its full potential.
Food matching
The wine’s nobility requires very fine cuisine: scallops carpaccio, sushi, grilled seabass.
History
Paul Chanson was a great ambassador for the wines of France, and for Burgundy in particular. This Cuvée comes from old vines, which he bequeathed to the Hospices in 1974. Paul Chanson always used to say they were Pinots Blancs, rather than Chardonnay. They are planted on a prominent hillock adjoining Corton-Bressandes, on land most often carrying Pinots Noirs, and give fascinating wine, often with an aroma of quince 30% of the vines date from 1987, the balance from 1940’s.
